The developer for Jack in the Box has looked at a couple of different sites in Lee’s Summit, and had pre-app meetings, but they have not submitted any application.  I’ve heard that Dunkin Donuts is looking, but they haven’t submitted anything.  Chipotle is going into the old McDonald’s building at 291 and Columbus. A new shopping center is proposed to the northeast of Summit Fair (east of Blue Parkway, north of Ward Road), but it still has to go through the public hearing process, so it will likely be 2012 before development starts. The developer (RED Development) is not announcing the names of any stores yet.

These are all over Utah, Idaho, and a few other western states.  I've eaten at one in Salt Lake City . . . pretty good.  Reminds me of a combination between Baja Fresh and Chipotle.

Cool!  Cafe Rio is another Mexican restaurant all over Salt Lake City I would like to see expand out here, they are also in Colorado and now have new locations back east in Mansassas, VA and Olney, MD.

Flip Short the president of ViraCor is a great guy. Don't really want to get into how I know him, but he is an outstanding person.

I don't know if he has any real estate development experience or how committed he is to this project, but he is certainly not a flim flam artist.
